Ozone is a strong oxidant that destroys the cell walls of microorganisms, including yeast, mold, and bacteria. Biofilms and organic compounds are also broken down.

Another advantage of ozone treatment is that it doesn't damage the interior of the barrel, thus reducing its lifespan.
